Buy two coconuts. Break and wash the coconut
Cut in pieces
Blend it and fry the flakes using oil and salt
Mix the dry ingredients together. Cream the butter and eggs till smooth then pour the dry ingredients while stirring. Mix for thirty mins and then pour the homemade coconut flakes. Oil the pan, preheat the oven and pour the mixture. Bake for 45 or 50mins at medium temperature depending on the size of the cake. Insert a toothpick to ensure the cake is done. Bring out of the oven to cool.
Note: Flour should be sieved. Sugar reduced by 50 or 100. All cake ingredients used should be at room temperature.
