MAKING BEANS PORRIDGE AND PLANTAIN WITH EGG SAUCE
Wash the beans and boil for a few minutes then pour out the brown water and cook for few minutes. Wash again if the water is brown then cook. Add a little red oil or the healthier option is the big red peppers blended with onions and green pepper. Cut two fingers of plantain for taste and slice then add to the beans. Add some pepper and curry. Salt should be added when the beans is soft.
PLANTAIN WITH EGG SAUCE
Boil some plantain and when done cut some red pepper, onions and tomatoes and pour in oil. Break two eggs and pour in the sauce and stir for a few minutes.
Ready to serve.
