GUIDE TO MAKING EGUSI SOUP AND WHEAT MEAL
Assemble the ingredients:
big red peppers, onions, tomatoes, spinach, reduce melon, fish and chicken
Boil the chicken and then bake it.
Boil the fish.
Blend the peeled melon seeds till smooth and mix with water.
Bake the chicken in the oven and when done mix it with the fish either stockfish or dried fish.
Blend tomatoes, red peppers and onions and pour in the soup. A spoon of red oil can be used as an alternative to red pepper, but a healthier option is the big red peppers.
The curry is added for taste in addition to crayfish, salt and pepper.
Let the mixture boil and add the already blended melon mixed with water to the soup. Let the soup boil for a while then add the vegetables. Stir the soup with a spoon for a minute then switch off the gas cooker. Soup is done.
Note: Melon quantity can be reduced and a lot of vegetables added for healthier options.
Meat can also be used instead of chicken, but lean meat or chicken is considered healthier
This can be eaten with wheat or plantain flour, but wheat is a healthy option. for me because I do not like the smell of plantain flour.
